Re-opening of Vi Cool restaurant in Ibiza

The rooftop terrace at Hotel Aguas de Ibiza is becoming one of the best luxury restaurants in Ibiza for yet another year, offering up a special place in Santa Eulalia where you can enjoy food by chef Sergi Arola.


Last June 10th, 500 people attended the launch of the new season of Vi Cool restaurant by Sergi Arola. The Torres Gutiérrez family, the owners of Aguas de Ibiza Lifestyle & Spa were there, as well as some designers from Moda Adlib Ibiza, political personalities and bloggers. At the event, they revealed the new menu, with surprising new options like suckling lamb durum with yoghurt and mint sauce; a definite commitment to new and varied ingredients.


Some spectacular cold dishes stood out, like the sea bass ceviche or the octopus cocktail. However, we can’t forget about the delicious hot dishes, old favourites like meatballs glazed with melted manchego cheese, croquettes filled with idiazabal cheese or the potatoes with eggs cooked over a low heat, garnished with rosemary and topped with Iberian ham.


The creator of the Vi Cool concept, awarded a prestigious Michelin star, has a simple definition for his cooking and its philosophy: “it’s putting old tastes into vogue with a personal touch, but without forgetting their very nature”. Remember that Vi Cool Cocktail Bar is open everyday from 12pm until 2am. It’s without a doubt the ideal place to spend a perfect evening sitting on a terrace overlooking the sea. We recommend trying one of our top cocktails: the Ibiza Sling, the Romeo and Juliet or Gin Atomic. This year, the cocktail menu has been designed by award-winning barman Iván Talens.


The Vi Cool Restaurant is open from 7:30pm, so with its simple concept, share a simple, unpretentious meal with friends, enjoying great dishes at great prices. The restaurant is also a wine bar, so savor our dishes with a glass of white, red or rosé from our excellent wine selection.


For the last three years, the restaurant has been a complete success and we don’t expect this new season to be any less so, especially with the addition of famous bartender Iván Talens and a simple yet satisfying menu.
